With so many different diets out there and so many expert opinions on what you should and shouldn't eat, it is getting more difficult rather than easier to find out what is truly good for you.
Dr. Tae Yun Kim has a very balanced and health oriented approach to food, food preparation, and eating. She includes all foods in moderation, and suggests organic foods simply because they are grown and harvested without any chemicals and poisons and typically have more nutrients because they are grown in richer soils.
Dr. Tae Yun Kim stays away from any sort of fad diets, and recommends listening to your body instead, and follow common sense.
So when she prepares rice, she only uses brown rice to include all the fiber, proteins and minerals found in rice. She also mixes it with a variety of beans, to increase protein content, add more fiber, and a wide variety of minerals. Not only is the resulting bean rice more nutritious, but also very flavorful and and a great base for many healthy meals!
To cook this bean rice, it is easiest to get an electric rice cooker with a setting for mixed rice. Soak rice and beans for at least 4 hours, then either cook in your rice cooker, or cook gently on the stove top, being careful not to let it burn. I would measure equal portions of rice to water, so one cup of soaked rice and 1 cup of water - and see if that works for you; you might need slightly less or slightly more water to cook.
