In addition to eating mostly produce that is in season, Dr. Tae Yun Kim recommends that simple preparation is often better for you. This also means that you will be finished and ready to eat a lot quicker!
In this example, Dr. Tae Yun Kim started by sauteing yellow onions, cut in strips, with garlic, beef broth and a little grated ginger, and added potato slices, tofu, carrots, asparagus, mushrooms and thinly sliced Napa cabbage. She dissolved some authentic Korean “Daeng Jang” and added it in, which gives it a very delicious, Korean taste. If you cannot purchase it at your local Korean/Asian foods store, you can still whip up this delicious dish by using soy sauce. Dr. Kim also added some freshly squeezed lemon juice and cherry tomatoes.
This is a very light and refreshing summer meal, and you can change/add vegetables to your liking. This is great with brown rice, noodles, and/or any type of seafood.
